For The Love Of Food: A Case For Coconuts

I don't get to eat coconuts as often as I would like, maybe because I don't always find them to buy easily, however, I am a big fan of coconuts - I love 'em! What's not to love about coconuts? I would start by chilling the coconut water for a bit and then sipping happily while chewing the white juicy flesh. I could also make it into any of the delicacies that will be mentioned below and enjoy. But apart from the excellent taste of coconuts, knowing the following benefits they bring keeps me in love with them:

  • It boosts immunity. Coconut has been used for a long time as a remedy to kill bacteria, fungi and viruses in folk medicine. That's why coconut oil is recommended as a mouth wash.
  • It improves calcium and magnesium absorption thereby supporting the development of strong bones and teeth.
  • Protects our bodies from free radicals which promote premature aging and degenerative diseases like Alzheimer's and dementia.
  • It is a good source of quick nutritional energy.
  • Coconuts help in the treatment of epileptic seizures.
  • It metabolizes fat thereby resulting in loss of excess weight. It is reported that it reduces belly fat effectively.
  • Coconut water is pure and sterile. It is even reported to have been used during the second world war for blood transfusion (remember Jackie Chan in 'who am I?', the coconut water drip).
  • Coconut water has a high concentration of electrolytes, making it a wonderful source of hydration.
  • It protects the body against heart disease.
  • It helps to keep our hair and skin healthy.
  • Coconut oil is considered very healthy for cooking.
If you are wondering how to incorporate more coconuts into your diet, you could try these recipe:

1. Coconut rice

Coconut rice is just yum-yum and a nice diversion from regular white rice or even fried or jollof rice. Learn how to make it here or here.

2. Coconut candy

This is an all time favorite for me, right since primary school days up until now, after all, it's kinda difficult to outgrow candy. Make coconut candy as easy as you please, just like this.

3. Coconut milk

Hmmn, it's nourishing, creamy and tastes delicious. You can just chill with a glass anytime. The only catch is, it's best consumed within 4 - 5 days max, so you need to make it fresh. But it's really easy.

4. Coconut water fruit blend

Via Korje.com

This is a burst of nutritional goodness. I have no other word but that you need to try it out. See how here.

5. Gurundi:

This one makes me go 'yay'. It's kinda like some kind of crisp and dry biscuits made from coconut flakes. In fact, I'm eating UAC's version of Gurundi right now as I write this post. You probably know it, it's called Funtime coconut chips. You can make it at home too, just follow these directions or here.

So, there you have it. The benefits of coconuts and 5 different ways you can get to eat them more. Please, enjoy!
