For The Love Of Food: How To Make Banana Pancakes Without Using Flour


I didn't even know it was possible to make pancakes without flour. I love pancakes and I am forever seeking new pancake recipes. This particular banana pancake recipe has quite a number of advantages:

1. It's really easy and fast.
2. It doesn't contain flour, so no need to worry about bad carbohydrates.
3. It's healthy food.
4. It's the perfect breakfast idea!


2 ripe bananas and 2 eggs are the main things you need to make these pancakes, in addition to some vanilla extract, cinnamon and baking powder, plus a non-stick frying pan.

Method:

Chop the bananas and feed them into a blender, add the eggs and a tablespoon of vanilla, a teaspoon of cinnamon and a teaspoon of baking powder and blend the whole thing till you have a nice and smooth paste. If you don't have a blender, you can mash up the bananas and combine all the ingredients together with an egg whisk. Then heat up a slightly greased pan (you can use butter/margarine, emphasis on slightly though, you don't want soggy pancakes) and pour out little batches into the pan. Cook until golden brown on both sides, you can serve them with sliced fruits and honey.
