For The Love Of Food: How To Make Perfect Yamarita At Home


So the fancy eateries call it 'Yamarita', this same good old food that we have known as dundun oniyeri all along. Egg coated yam fries if you like. It's really nice. Yamarita has a soft, sweet and moist interior while being nicely crunchy on the outside. Instead of just doing regular fried yam, why not try this dundun oniyeri recipe?

Lets skip all the paparazzi and get down to business. To make yamarita, you'll need yam (of course!), eggs, salt, sugar, seasoning cube, flour (optional), and vegetable oil.


1. Cut up your yam into small sizes of whatever shape you prefer and then cook them. Instead of cooking with salt however, cook with sugar (be careful not to use too much though). The cooking shouldn't be for long, you don't want the yam to get tender since it will still be fried. Some people call this step blanching. When it's done, drain the water.


2. Now is the time to dunk your blanched yam pieces in whisked egg (the egg should have been salted before being whisked, you can add seasoning cube to taste also if you like)., Some people roll the yam in flour before or after dunking in the eggs, but I personally prefer to skip the flour bit all together (I am a healthy cooking and eating fan, you know)


3. Fry the dunked pieces in pre heated vegetable oil till they are golden brown all over. You'll see the eggs bubbling over the yam immediately it hits the hot oil.



 4. Your tasty yamarita is ready to be served. Its moist and sweet inside, with a crunchy seasoned taste outside. Excellent blend, I must say. Serve with fried eggs (you can fry what ever is left of the eggs you dunked them in), or any kind of tasty stew!
