For The Love Of Food: 10 Simple Breakfast Ideas For Busy Mornings

You don't even have to love food to read this, you need breakfast! As we have all been told over and again, breakfast is the most important meal of the day. Having a good breakfast in the morning not only fuels you with energy for the day but it has also been linked to many health benefits including weight loss and better performance. Why then do we skip breakfast often? Probably because there's always a rush to meet up in the morning and no time to make breakfast.

Good news! I've got breakfast ideas for you that are fast and easy to make, plus they are super nutritious!
The trick to some of these breakfasts is to prepare all of it or most of it the night before, refrigerate and warm it up in the morning if need be.

1. Oatmeal/Quaker Oats and bananas

If you don't have time to spare in the morning, you can make it at night and microwave for a minute or two before you eat.

2. Toast Bread

If you have a toaster, then you are game. You can make simple toasts with just butter, or add in eggs, onions, tomatoes, diced hot-dogs..., anything!

3. Club sandwich

Make a sandwich with bread, boiled eggs, sardine, fresh tomato, carrot, cabbage, margarine/butter. Just grate the carrot and cabbage, marsh margarine and sardine together, mix the mayonnaise, cabbage, carrot, diced tomatoes and diced eggs together, then spread the mix alternatively as in the photo above.

4. Pancakes

I did a post on making pancakes previously on the blog, you can see it here. You can make the mix the night before.

5. Custard And Apples

It's that simple, just custard and apples. Indulge in as much milk as you want in your custard and enjoy it with apples or any other chewable fruits you have handy.

6. Bread and tomato omelette

Fresh tomatoes, onions, eggs, salt and pepper. Dice the 'diceables', throw them in with the broken eggs, add salt and pepper to taste and whisk well. Fry it like you would fry pancakes, with little oil, so it doesn't get soggy. Enjoy it with bread.

7. Banana - Yogurt Smoothie

If you feel you can't handle something solid sitting in your tummy so early in the day, then a smoothie is just what you need. See how to make it here. It's a real quickie, and nutrient packed!

  8. Cereals

But of course (in a Frenchman's accent), how can we leave out the cereals? Always there when we need to be on the go! There's a host of them: fruit 'n fibre, cornflakes, rice crispies, coco pops, etc. You can boost your cereal experience by having fruits alongside!

9. Boiled plantain and scrambled eggs

Easy peasy - boil ripe plantains (not soft ones though) and scramble some eggs! Breakfast served! You can add a twist to your scrambled eggs by adding veggies ( even green peas would make a difference).

10. Coleslaw

All you need to do is to have shredded your cabbage and carrots the night before and refrigerate. Mix it up in the morning (throw in any other extras you might like, e'g shredded lettuce and sweetcorn, etc), mix in your salad cream/mayonnaise or leave it without the cream and eat. You can have it with a couple of boiled eggs!

And on this note, I hereby encourage you to take the 'never skip breakfast again' challenge with me. You see it isn't so difficult after all, you just have to make a plan!
