For The Love Of Food: A Perfect Coconut Cake In Just TWO Minutes!


It's a cake in just two minutes because it's a mug cake baked in a microwave oven, and I'm sure it tastes great. I have not tried this recipe before but I have made a chocolate mug cake in my microwave and it was really enjoyable. I have no doubts this coconut cake would be just as good if not better. Straight from the diy heaven, here comes the recipe:

This recipe calls for an actual fresh coconut. You will need to grate it and extract some coconut milk, you can also make some coconut candy quickly while you are at it (I'm going to, just be sure not to clump it up) and then grate some more to use in the cake. 

Ingredients:

2 Tablespoons sugar

3 Tablespoons flour

1/2 Tablespoons vanilla

1 Tablespoons coconut milk

1 egg yolk

1 Tablespoons coconut oil

1/4 Tablespoons baking powder

grated coconut (optional, but highly recommended)




In a mug, separate out egg yolk and add warmed coconut oil - just until it liquefies (skip if using liquid coconut oil), vanilla, baking powder, coconut milk, and sugar. Mix well.


Gradually mix-in your flour until it is all incorporated into the mix, being careful not to over-mix.


Cook mixture in the microwave for 1 minute and 30 seconds. Keep a watchful eye on your mug cake. Less is more if you’re unsure.


How do you know when it's done? The edges and top of the cake should just be starting to get dry.

This is where the un-clumped coconut candy comes in, sprinkle it over the cake generously and enjoy.
